Our Iberico pork from Spain is a close relative of the world-famous, dry-cured jámon Ibérico. This exceptionally fine ham is also known as “pata negra” — literally “black hoof.”
The unique, nutty taste is a consequence of this rare breed of pig grazing on natural foodstuffs enriched with olive oil . A half-wild breed, Ibérico pigs live in oak groves on the meadows of Spain. The acorns that constitute a major part of their diet make Iberico pork extremely juicy and incomparably aromatic.
